
Another quick one, all done by time rice is cooked. Recipe for single serving.
Lentil Coconut Curry
Another nice a quick 15min meal
Ingredients
Rice
- 1 serving Rice
- 1/2 Stock cube
- 1 tsp Mixed spices
Curry
- 1/3 can Lentils
- 1/2 can Coconut milk
- 1/2 Stock cube
- 1/3 medium Onion
- 1 clove Garlic
- 1 tsp Chilli powder
- 1/2 tsp Garam Masala
- 1 tbsp Olive oil
- 4 Cherry tomatoes Quartered
Instructions
Rice
- Bring a saucepan of water to the boil
- Add rice (if rice is starchy rinse well under cold tap), stock cube and mixed spices
Curry
- Heat a saucepan and add olive oil
- Add the onions, chopped to your preference - diced/sliced/minced
- Let fry for a couple minutes, mixing up occasionally and add the garlic - I grate it
- Fry further for a minute or two, and add the cherry tomatoes and spices and fry for further 2-3 minutes
- Add the lentils and mix well
- Add the coconut milk and stock cube
- Simmer for 3-5 minutes (Add water if too thick for you)
