
This is a nice quick and ultra healthy soup, and so thick its more than just a snack, with or without some bread this could be your dinner. Most ingredients you can easily grow yourself and of course the nettles are free, love foraging! When picking the nettles use some decent gloves to avoid getting stung, pick the smaller leaves, they’re younger and pick away from pathways to avoid dog pee. Of course still give them a good rinse.
Nettle, Spinach and Carrot soup
Great time for nettle soup with fresh leaves abundant at the moment.
Equipment
- Only handy bit of equipment you'll need is a blender
Ingredients
- 1 bunch Nettles (be careful not to get stung!) Pick smaller, newer leaves, and rinse well to get rid of any bugs
- 1 bunch Spinach
- 6 medium Carrots Finely dice to speed cooking
- 2 Stock cubes
- 1 small Onion
- 1 clove Garlic
- 1 tsp Chopped fresh chilli
- 1 tsp Chopped ginger
- 1 tsp Garlic and onion granules
- 1 tsp Chilli powder Amend for personal preference
- 1 tbsp Olive oil
- 1 litre Water
Instructions
- Lightly fry the onion, garlic, chilli and ginger for about 3 minutes
- Add in the nettles, spinach, and carrots, fry and mix for a further 2 minutes
- Add the boiling water, stock cubes and additional spices
- Bring to the boil again, and simmer until carrots are soft - about 7 - 10 minutes
- Take of the heat and blend until smooth
- Dish up ๐
Never new you could eat nettles, I’ll get my hubby to pick them though!!
