Spicy Black Bean Soup

Black Bean Soup

I love Black Beans, they are so versatile – fry them up for tacos, buddha bowls, burritos, mash them together for balls, or put them in a soup. This is a great one for a winters day, full of goodness, warmth and taste.

Ingredients
  

  • 1 can Black Beans including liquid
  • 1 tbsp Olive oil
  • 1 medium Onion sliced small
  • 1 clove Garlic sliced small / minced
  • 2 Chillies sliced small
  • 1 Stock cube
  • 1 tsp Chilli
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Ginger
  • 1 cup Water
  • 1/2 cup Fresh coriander
  • 2 tbsp Lemon juice

Instructions
 

  • Saute the onions until they are nice and caramelised, or soft!
  • Add in the garlic, chillies and spices and fry for a couple of minutes
  • And the can of black beans, their liquid too
  • And another can of water
  • And the stock cube
  • Add 3/4 the coriander and bring to a boil stirring occasionally
  • Turn heat down and simmer
  • Take 1/3 of the contents out and blitz in a blender (or in the pot if immersion blender is working!!) [Alter this to get the consistency you want]
  • Add the lemon juice
  • Simmer for another few mins, dish up and sprinkle the remaining coriander on

    I love black beans but sometimes they are salty – any tips before I try this?

      Yeah, different brands have different saltiness, and even at that it can vary. The lemon should take a bit of the salty edge off. You could add some sugar or agave syrup. Have a taste of the liquid they are in and if thats very salty, dump it, rinse the beans and add two cans of water. You might want to add a bit more stock for flavour lost in the bean juice water.
