Nettle, Spinach and Carrot soup

Great time for nettle soup with fresh leaves abundant at the moment.

Equipment

  • Only handy bit of equipment you'll need is a blender

Ingredients
  

  • 1 bunch Nettles (be careful not to get stung!) Pick smaller, newer leaves, and rinse well to get rid of any bugs
  • 1 bunch Spinach
  • 6 medium Carrots Finely dice to speed cooking
  • 2 Stock cubes
  • 1 small Onion
  • 1 clove Garlic
  • 1 tsp Chopped fresh chilli
  • 1 tsp Chopped ginger
  • 1 tsp Garlic and onion granules
  • 1 tsp Chilli powder Amend for personal preference
  • 1 tbsp Olive oil
  • 1 litre Water

Instructions
 

  • Lightly fry the onion, garlic, chilli and ginger for about 3 minutes
  • Add in the nettles, spinach, and carrots, fry and mix for a further 2 minutes
  • Add the boiling water, stock cubes and additional spices
  • Bring to the boil again, and simmer until carrots are soft - about 7 - 10 minutes
  • Take of the heat and blend until smooth
  • Dish up :)
