Lentil Coconut Curry

Ingredients
  

Rice

  • 1 serving Rice
  • 1/2 Stock cube
  • 1 tsp Mixed spices

Curry

  • 1/3 can Lentils
  • 1/2 can Coconut milk
  • 1/2 Stock cube
  • 1/3 medium Onion
  • 1 clove Garlic
  • 1 tsp Chilli powder
  • 1/2 tsp Garam Masala
  • 1 tbsp Olive oil
  • 4 Cherry tomatoes Quartered

Instructions
 

Rice

  • Bring a saucepan of water to the boil
  • Add rice (if rice is starchy rinse well under cold tap), stock cube and mixed spices

Curry

  • Heat a saucepan and add olive oil
  • Add the onions, chopped to your preference - diced/sliced/minced
  • Let fry for a couple minutes, mixing up occasionally and add the garlic - I grate it
  • Fry further for a minute or two, and add the cherry tomatoes and spices and fry for further 2-3 minutes
  • Add the lentils and mix well
  • Add the coconut milk and stock cube
  • Simmer for 3-5 minutes (Add water if too thick for you)
