Black bean rice balls

Ingredients
  

Spagetti

  • 1 portion Spagetti
  • 1 tsp Salt
  • 1 tsp Olive oil

Tomato sauce

  • 1 small can Tomatoes (227g)
  • 1 tsp Chilli powder, garlic and onion granules
  • 1 tsp Olive oil

Bean Balls

  • 1 can Black beans (235g drained) Blended/mashed up
  • 1/2 medium Onion Fine diced
  • 1 portion Brown basmati rice (70g) Brown has a nice bite
  • 2 tbsp Tomato puree
  • 1 clove Garlic Minced
  • 1 tsp Fresh chilli Finely chopped
  • 1 tsp Garlic and onion granules
  • 1 tsp Freshly diced ginger
  • A dashes of chilli sauce
  • 2 tsp Salt and pepper
  • 1/2 Lemon

Instructions
 

Tomato Sauce

  • Heat some olive oil and add the garlic and fry gentle for a couple minutes
  • Add can of tomatoes to a saucepan and blend if any large tomato pieces present
  • Add the spices and let simmer while you prepare and cook the rest

Bean Balls

  • Put the rice on while you prepare the rest - brown basmati takes 25mins
  • Mash up the black beans - my blender is broke so just used a fork and did small amounts at a time on a chopping board and add to a large bowl
  • Add a squeeze of lemon
  • Finely chop half an onion and add in
  • Finely chop some ginger and chilli and add in
  • Drain and slightly cool the rice and add it to the bowl
  • Add the tomato puree, dash of chilli sauce and other spices
  • Toss and mix everything together
  • Grab small handfuls and press and manipulate into balls
  • Place on a baking tray and stick in oven for 15-20 mins (190 fan)

Pasta

  • Put your pasta on to time end time with the bean balls

Dish up and top with coriander leaves, chilli flakes, salt and pepper
